Recipe: Chocolate Peanut Butter pie

Tonight I made Adina a chocolate peanut butter pie from scratch. It even had a homemade crust! I am so proud of myself, and it was quite tasty.
Recipe as follows:(taken from stinkycretingurl)

Crust:
1 1/2 cups rolled oats
1/2 cup whole wheat flour (I actually did half whole wheat flour, half ground flax meal)
pinch salt
5 TBSP veg oil of choice
2 TBSP maple syrup
2 or 3 TBSP rum

Heat the oven to 375 degrees. Mix up the oats/flour/salt in a bowl. In a separate bowl combine the oil/sweetener well. Add the oat/flour mixture and combine thoroughly. Mix in the liquor adding enough to moisten the mixture and hold it all together. pat into an oiled pan and bake for 12/15 minutes until a LIGHT brown.

Filling:
1 cup semi-sweet chocolate chips
1 12 oz container firm silken tofu
1/2 cup maple syrup
1 cup creamy peanutbutter
chocolate covered graham crackers

Melt chocolate chips. Combine tofu and maple syrup in food processor and mix for at least 3 minutes until very very smooth. Add in peanut butter. Let it go for another minute. Add in melted chocolate. mix some more. Poor into the cooled crust and top with crushed cookies! Put in fridge to let it set/chill. Enjoy.

yum
